Description: Interiors do not endure time. They last a few years before a new owner rips out existing materials to create a new environment. Our industry earns money by this constant turnover, particularly the hospitality world…but is this legacy what we want to leave – fast fashion? Can we not create an attitude in our industry to cherish the endurance of good design; prizes for saving the existing; can we create a City Harvest for the Interior Design industry? Can we design reusable systems for interior surfaces – design the “take-down” – plan a purposeful disposal at the outset? Can we please stop the waste? Dr. Carol Bentel FAIA makes a case for the reuse of materials that most often get tossed with little thought for their reuse. As a three-time James Beard recipient for restaurant design (and a book about restaurants), she is going restaurant-by-restaurant to convince chefs/restaurateurs to reach her while re-designing a space to find a home for discarded materials to salvage for others, including new start-up restaurants. A gut job at Eleven Madison Park, just after becoming the 2017 Top Restaurant of the World with Bentel & Bentel Architect’s design, sparked the idea to initiate a plea for sustainability
